Traditional cuisine has always been directly related to artisan producers, both from the farmhouse and from the sea, the proximity and freshness of the products has been and continues to be, the cornerstone of Basque cuisine and an interesting world to discover.
From the complicated first expeditions to catch the Newfoundland and Norway cod, to the oldest and simplest arts such as pots or baskets, designed to catch seafood and octopuses, each and every one of them has a typical dish that we will discover as configured from origin focusing on its fishing, conservation and preparation.
The humble casseroles that the sailors heated on board, with the same coal that fed their small engines, eaten with bread and a knife, later became delicacies of restaurants with gastronomic stars, decked out in fine tablecloths and polished cutlery. Always with a common factor, the care for the seasonal product and its way of extraction.
